We really enjoy creating panoramic photographs - they make wonderful wall art, are great fun to make and are akin to the way we see things.
We create our panoramic pics by stitching together more than 2 (usually 5 or 6) images in Adobe Lightroom, paying close attention to see that the image blending has been done correctly. More often than not, Lightroom does a superb job but when it doesn't get things right we move over to Photoshop where there is more control over the process.
We also create HDR panoramic RAW photographs and this is particularly useful when we are working in difficult lighting situations like when shooting lodge interiors.
